Summer starts oficially today in Australia so I say Happy Summer with Strawberry Ice Cream!

Strawberry Ice Cream 1 To commemorate the strawberry season I present you the ultimate strawberry ice cream, made with strawberries cooked in sugar and vanilla for an outstanding strawberry flavour.

It’s so easy to create great recipes and beautiful food photography when the produce looks like that:

 Ingredients 

Ingredients:

500g strawberries, hulled and roughly chopped

180g caster sugar

1 vanilla pod, seeds scrapped

500ml milk

500ml double (heavy) cream

10 egg yolks

2 drops red or pink food colouring (optional)

Equipment:

Ice Cream Maker

 Instructions 

1. In a small saucepan over medium heat combine the strawberries, 80g sugar, vanilla pod and seeds. Cook, stirring occasionally, for 5-8 minutes or until thick. Remove the vanilla pod and using a stick blender or the food processor process the strawberries until smooth.

2. In a medium saucepan over medium heat combine the milk and cream and just before it starts to boil remove from heat.

3. Beat the egg yolks with the remaining sugar (100g) until thick and pale. Slowly pour in the milk and cream mixture and whisk well to combine. Pour the mixture into a clean saucepan over medium-low heat and stir with a wooden spoon for about 10 minutes or until it starts to thicken (be careful not to boil the mixture as it may curdle). Take it from heat and set aside to cool. Stir in the strawberry puree.

4. Churn the mixture as per your ice cream maker instructions (add food colouring in the beginning of the churning, if using). Pour in a freezing-proof container and place in the freezer overnight to set.

Makes: 1.5 litres

Sorvete de Morango

 Ingredientes 

500g de morangos, sem folha, picados

180g de açúcar refinado

1 colher de chá de extrato de baunilha

500ml de leite de vaca

500ml de nata fresca

10 gemas

2 gotas de corante alimentício vermelho ou rosa (opcional)

Equipamento:

Máquina de fazer sorvete

 Modo de Preparo 

1. Em uma panela pequena sob fogo médio junte os morangos , 80g de açúcar e baunilha. Cozinhe, mexendo ocasionalmente , por 5-8 minutos ou até engrossar. Bata a mistura no processador de alimentos ou liquidificador até ficar homogênea.

2. Em uma panela média sob fogo médio misture o leite, a nata e pouco antes de começar a ferver, retire do fogo .

3. Bata as gemas com o açúcar restante  (100g) até que a mistura fique espessa e clara (ponto de gemada). Despeje lentamente na mistura de leite e creme de leite e misture bem para incorporar. Despeje esta mistura em uma panela limpa em fogo médio- baixo, mexendo com uma colher de pau por cerca de 10 minutos ou até que comece a engrossar, cuidando para não ferver porque pode talhar. Retire do fogo, cubra e deixe esfriar. Junte o purê de morango.

4. Bata a mistura na máquina de sorvete de acordo com suas instruções (adicionar corante alimentar no início da agitação, se estiver usando). Despeje em um recipiente adequado e coloque no congelador da noite para o dia para firmar.

      Thanks so much Shoshanna! I can’t believe it worked, it’s so hard to shoot ice cream, it was my second attempt because on the first the whole thing melted before I was able to find the right angle! lol

        I experienced it (melting) once with a coconut ice cream preparation
        which melted much faster than the regular one before I can click.
