It is a cylinder-shaped vegetable harvested from the inner core of some palm trees. Some hearts of palm can be eaten raw, cooked or roasted but in Brazil the preserved ones still reign supreme in home-made recipes. Great in salads, soups and savoury mousses. Available from selected gourmet shops and online*.
*Availability in Australia, please check your own country’s online stores, supermarkets or South American Grocers for Brazilian ingredients.
