Widely used in Portuguese and Brazilian cuisines, it is a cod fish that is preserved by drying after salting. It needs to be rehydrated and desalted to be used in recipes. It is simply delicious with olives, tomatoes, onions, roasted capsicums, potatoes and olive oil. Available from selected gourmet shops, and Portuguese and South American shops*.
